Sulphites are commonly used as preservatives in beer, wine, dried fruits and meat products. It can cause people headaches (red wine), red and itchy skin, rashes, and hives. Conventional dried fruits have added sulphites to preserve the fruits original colour at ripeness, keep them soft and increase shelf life. So, remember, the darker appearance on dried fruit represents the natural aging process – that’s a good thing.
