Beef Liver Recipe - Primal Beef Liver Egg Slice
Primal Beef Liver Egg Slice Recipe by Ancestral Nutrition.
    Serves: 15
Prep time: 15 mins | Cook time: 20 mins
    Ingredients

    - 1 brown onion, diced
    - 2 tsp tallow, coconut oil or ghee
    - 1 punnet (or 250g) cherry tomatoes, chopped in half or quarters
    - 1 zucchini, grated
    - 500g beef mince
    - 1-2 tbsp freeze-dried liver powder
    - ½ tsp sea salt
    - 10 eggs

Optional extras to enhance the flavour:
    - Broccoli, capsicum, mushrooms, spring onion or any other veggies of interest
    - Herbs or spices  such as cumin, smoked paprika, parsley, thyme, oregano, chives etc.
    - 2-3 rashes of bacon, chopped
    - Cheese

*Tip for meat that’s never dry -  during cooking in the fry pan, sprinkle a little (1-2 tsp or so) of psyllium husk.

    Method

    1. Preheat oven to 200C. Heat tallow, coconut oil or ghee in a fry pan on medium - high heat. Add onion to the pan. Saute until fragrant and translucent.
    2. Add beef mince to the onion in the pan, stirring with a wooden spoon for a few minutes. Add in tomato and zucchini (and any other optional extras, if using).
    3. Stir in liver powder and salt, and take off heat when meat is cooked and veggies are mixed in.
    4. Pour the mixture evenly into a ceramic baking dish.
    5. Whisk eggs together and pour over the meat mix in the baking dish, combining it all together.
    6. Cook in the oven for 20 minutes.
    7. Cut into slices and enjoy on their own as a snack or meal, or with a chilli sauce or tomato ketchup.

    ENJOY!
