    Knowledge Explore: What Are Mycotoxins?

    Toxins that are naturally produced by certain types of mould or funghi.

    They are often found in produce such as grains, nuts/seeds, spices and coffee beans, especially when they are grown in hot and humid conditions. The mould contamination can happen both before and after a crop is harvested.

    Some of the more common types of mould that may impact our health include aflatoxins (frequently found in tree nuts and cereals such as wheat and corn) and ochratoxin A (which is often in coffee beans and wine).

    The impact of mycotoxins on our health can be both short and long-term, with effects ranging from organ damage to skin irritation or suppression of the immune system. 

    Some things you can do to minimise the effects of mycotoxins in food include buying grains and nuts that are as fresh as possible and keeping them stored in the fridge or freezer, and not keeping foods for long periods of time before they are consumed.
