What is Resistant Starch?
Resistant starch is a type of starch that “resists” being broken down in the stomach and small intestine and is instead, digested in our large intestine or colon. Once it’s fermented or digested in the colon, it acts as a prebiotic to provide food for your beneficial gut bacteria.
Unlike typical starchy, carbohydrate-rich foods such as pasta and bread, resistant starch doesn’t spike your blood glucose levels. In fact, some research shows that it may actually help stabilise blood sugar levels. It can also improve digestive health as it’s converted into butyrate, a type of short-chain fatty acid which helps to support your gut lining and prevent “leaky gut”.
Some sources of resistant starch include cooked and cooled potatoes and rice, oats and legumes. However, the richest natural source of resistant starch is found in green lady finger bananas, grown in tropical North Queensland…and these are the very bananas that Natural Evolution use in all of their gut-loving products!
Sweet Potato & Peanut Butter Swirl Brownies Recipe
Ingredients
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 cup of chocolate chips
- 2 eggs
- 1/2 cup melted coconut oil or olive oil
- 1/3 cup honey or maple syrup
- 1 tsp pure vanilla extract
- 1/4 cup smooth (and pourable) peanut butter
Method
- Preheat your over to 180 degrees Celsius.
- Mix wet ingredients (excluding peanut butter). Add green banana flour, baking powder, baking soda and chopped chocolate.
- Pour brownie mix into lined square baking tray, drizzle with peanut butter and use a knife or skewer to swirl it through.
- Bake for 30 minutes, check and cook for 5 minutes longer if needed. Brownies should look slightly cracked on top.
Variations
- Swap sweet potato for 2 cups of packed zucchini, grated.
- You will need to add an additional 1/4 cup of green banana flour to compensate for the moisture.
- Swirl raspberry jam as well as PB for PB & Jelly.
- Add 1/2 a cup of frozen raspberries and omit peanut butter for a lunchbox friendly version.
