Did you know that many commercial almond meal products are blanched before milling? In a nutshell, this means the husk or skin has been removed, taking with it the important nutrients. You can spot a natural, unblanched almond meal by the speckles of husk.

Hot tip.
Use spelt-crumbs to add crunch to gratins, to coat fish or vegetables for pan frying, thicken stews, or toast and toss with pasta, garlic, parsley and olive oil to create a Pangrattato.
