They optimise the nutritional benefits of their ingredients by sprouting and fermenting their grains and flours, using their own original 35-year old leaven to ensure maximum digestibility. And, with a deep understanding and respect for their craft, after 35 years they still make every single loaf by hand from their family owned and operated bakery in Torquay.
