This Sausage Ragu is her weeknight go-to! It’s hearty, flavour-packed, and on the table in under 10 minutes. The best part? You probably have everything you need in your pantry or freezer already.

Ingredients
-6 sausages (pork works beautifully, but use beef, chicken, or turkey if you prefer)
-1 brown onion diced or onion powder
-2 carrots diced
-2 celery sticks diced
-4 cloves garlic or garlic powder, finely chopped
-1 tsp fennel seeds (optional but adds great flavour)
-1 splash apple cider vinegar (for deglazing)
-2 tbsp tomato paste
-400 g tinned tomatoes
-250 ml bone broth (beef, chicken, or vegetable)
-1 splash Worcestershire sauce
-350–400 g pasta of choice
-Parmesan to serve

Instructions
1. Squeeze the sausages out of their casings into small chunks. Heat a large pan over medium-high heat, add a splash of olive oil, then add the sausage pieces and cook until browned. Remove from the pan and set aside.
2. In the same pan, add onion, carrot, celery, and garlic. Sauté for 4–5 minutes until softened. Stir in the fennel seeds, then deglaze with apple cider vinegar, scraping up any browned bits from the base.
3. Add tomato paste and cook for 1 minute, then stir through diced tomatoes, bone broth, and Worcestershire sauce. Return sausage to the pan, reduce heat to medium-low, and let the sauce bubble gently while you cook the pasta.
4. Cook pasta according to packet instructions. Once al dente, drain (reserving some pasta water) and add to the ragu. Toss everything together, adding a splash of pasta water if needed to loosen the sauce and bring the flavours together.
5. Serve with a generous sprinkle of parmesan.
