Did you know lentils need to be soaked prior to cooking? These nutritional gems have an outer shell containing anti-nutrients that our bodies find difficult to digest. Rinse them off (and boost the vitamin, mineral, protein and antioxidant levels) by soaking the lentils for at least 2-4 hours before whipping up your meal.
Grown in the self-mulching soils of the Wimmera in Western Victoria.
Keep these on standby all year round. In summer, they can be tossed into salads. In winter, they make braised dishes much more hearty and healthy.
