Time for Savoury Snacks

Jordie has shared with us a yummy crumbed chicken/fish recipe. Imagine delicious protein bites that are crunchy on the outside, juicy on the inside, use only five ingredients and are gluten and dairy free. These chicken/fish bites are perfect for lunchboxes or when you crave a nutrient-dense, satiating snack.
Crumbed Chicken/Fish Recipe

- Pat the chicken or fish dry using a paper towel. Slice the chicken or fish into large, bite-sized pieces.
- Add the seasoning and the broken up rice paper spring roll wrappers to your food processor. Blitz until it resembles ‘fine’ rice flakes with some texture.
- Pour the seasoned rice flake mix into a shallow bowl.
- Add the egg into another bowl and whisk it.
- Add chicken/fish pieces into the egg mixture, coating them evenly with your hands, and then dip them into the rice flake mix. You may need to wash your hands at this stage, otherwise the coating mixture can build up and go gluggy on your fingertips. You’ll have to do this crumbing process in batches.
- Heat a frying pan and add enough oil to pan for shallow frying.
- Once it’s heated, add the chicken or fish pieces in (careful not to overcrowd the pan) and fry them on both sides until crispy and golden brown.
- Remove the pieces once they're ready and place onto a large plate lined with paper towel.
- Repeat this process and cook the chicken or fish in batches until all of it's done.
