Mushroom and Oomite Congee
The beauty of congee lies in its simplicity and adaptability - it can be flavoured with a variety of different ingredients.
Ingredients:
For the mushrooms
- 1 tbsp mirin
- 2 tbsp oomite spread
- 1 tbsp maple syrup
- 1 tbsp sesame oil
- 1 cup of mixed mushrooms, sliced (mix of shiitake and swiss brown)
For the congee:
- 1 tbsp sesame oil
- 4 spring onions, sliced (white and green parts)
- 1cm piece of ginger, peeled and finely grated
- 2 garlic cloves, finely grated
- 1 cup of mixed mushrooms, grated (mix of shiitake and swiss brown)
- 1 cup of white rice
- 2 cups of chicken bone broth
- 4 cups of filtered water
- 1 tbsp Oomite spread
- salt and pepper, to taste
Serving suggestions: soft boiled egg, spring onion, sesame seeds, chilli oil
Method:
- Combine the marinade ingredients in a small bowl. Mix through the mushrooms and set aside in the fridge.
- Drizzle a large pot with sesame oil. Sauté the spring onions, ginger, garlic and grated mushrooms over medium heat for 10 minutes. Add the rice, bone broth and water. Bring to a boil then cover with a lid and reduce to low heat for around 50 minutes. Stir regularly. Once the congee is a soft, porridge like consistency, remove it from the heat and stir through the Oomite.
- Heat a non-stick frypan over medium-high heat. Add the marinated mushrooms and fry for 5 minutes, stirring regularly. Divide congee between bowls and top with the mushrooms, soft boiled eggs, spring onion, sesame seeds and chilli oil.
